Costa dei Campi borders on Puglia and brings there its typical and consolidated love for nature by producing, in Pulsano Marina (TA), this extra virgin olive oil (from Coratina and Peranzana cultivars) with a very strong and fruity flavor, spicy notes, and a fresh and grassy aroma with hints of citrus and ripe tomato.
Our "Puglia" EVO oil is obtained from the blend of two typical olives from Puglia: coratina and peranzana.
The Coratina olive is the symbolic cultivar of this region. It is an olive with a characteristic purplish color (when fully ripe) and a typically fruity and slightly spicy flavor, due to the high concentration of polyphenols.
To sweeten its tingle and make it more palatable, we decided to combine this oil with the Peranzana olive: this cultivar has deep green fruits, an elegant and refined aroma, an unripe fruity bouquet enriched with almond aromas, dried fruit and tomatoes. Peranzana oil is initially sweet and then becomes intense and persistent, slightly bitter and with a surprising spicy touch. It's a strong and exclusive blend… absolutely to try!
Try it on soups and broths, salads (especially those with bitter herbs), grilled vegetables and wild game meat dishes.
Try it also on fish, grilled meat, porcini mushrooms and aged hard cheeses.
